Sunday Morning Crockpot Oatmeal (Apple & Raisin Version)

Sunday mornings can be downright disastrous in our home. Getting 8 people up on time, ready and out the door is, in my mind at times, miraculous. I’ve long given up on matching socks, hair perfectly combed or clothing that doesn’t have any wrinkles, like I said- it’s a MIRACLE just to get out the door and to church on time. Anything that makes a Sabbath morning easier is truly a blessing for this frazzled mama and this dish doesn’t disappoint!

Okay– so oatmeal has not always been one of my favorite meals, but this recipe makes creamy dreamy oatmeal that I could seriously get used to.  I found a variation of it in a cookbook of mine and thought, “Wow, it would really be nice to wake up in the morning and not have to make breakfast… I’ll give it a shot.”

 You can use just about any fruit, but our favorites are apples and raisins with brown sugar and cinnamon, which will be the version I share with you today. Not only will tummies be filled with warm, nutritious food in the morning, you will wake up to the most wonderful smell throughout the home! Seriously- combine that with fresh coffee brewing and oh my! It’s grandma’s house all over again!

 You really can’t go wrong with the amounts of the ingredients as long as you provide enough moisture for the oatmeal to cook through the night. I am so used to doing it now that I eyeball my ingredients for my 6-quart crockpot.
So, here’s how I do it:

Spray your crockpot lightly with some non-stick spray.
Peel and slice about 6-8 small apples, and layer in the bottom of the crockpot.

Sprinkle with raisins- as many as you want.

Put about 5 or 6 pats of real butter randomly atop the apples and sprinkle with cinnamon.

Next, take about a cup, to a cup and a half, of brown sugar and sprinkle this across the top of the apples.

Now, take about 2-3 cups of oats- not the quick-cook kind!- and pour those over the brown sugar layer.
Sprinkle with more cinnamon if you like.
Next, pour 2 cups water and 1-2 cups of milk over the oats till the liquid comes up to the ‘lip’ of your crockpot— DO NOT STIR ANYTHING.
add some extra pats of butter on top. I think, in total, I use about a 1/4 cup of butter from start to finish.

Cover and cook on LOW over night. *** I start this about 10 pm at night, and wake up around 7:30am-8am to creamy, dreamy wonderfulness.***

When you lift the lid, check the consistency of your oatmeal. Keep in mind that different crockpots cook at different temps sometimes. Mine is truly a slow cooker, so I don’t worry about it overnight, but I know some people who say theirs crockpots cook things faster than most… You can add more liquid if you need to thin it out, or you can add a little more oats to soak up liquid if need be.

It tastes like apple crisp, y’all.

You can stir it all up in the pot to distribute all the ingredients. We like to scoop all the way down to the bottom in ‘sections’, place in a bowl, and splash the oatmeal with a little bit of creamer.
You can also add more sweetener at this point if you wish, but we think it’s plenty sweet if you get enough apples with each bowl.
(Note- the raisins WILL rehydrate while cooking overnight– making them soft and plump– if you don’t like that texture, then wait till morning to add your raisins)
Sunday Morning Oatmeal is a delicious, nutritious and time-saving breakfast for church mornings, but also for any morning that you need to save a little time. Enjoy!
**This recipe serves my family of 8 well. I have also served it with fresh fruit and ham slices on the side for a larger meal.**
