After battling a week of family sickness, I am FINALLY getting around to getting this post out to you all! Apple Bread is soooooo good! Here’s my recipe– Enjoy!
Ingredients:
3 cups flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 cup oil
4 eggs
2 cups sugar
1 tsp. vanilla
1/4 cup milk
3 cups diced apples
1 cup chopped walnuts (optional)
Preheat your oven to 350 degrees. Prepare two bread pans with non-stick spray.
Mix together the flour, baking soda, cinnamon and salt in a small bowl and set aside. Then, mix the oil, sugar, eggs, vanilla and milk in a larger bowl and set aside– seriously just mix it all together with a whisk- no fancy steps here, very easy! Take your dry ingredients in the small bowl and mix those into the wet ingredients in the larger bowl. Set aside.
Chop up your apples, 3 cups worth. Gently fold them into the bread batter. Pour half of the batter into each prepared bread pan. sprinkle the tops of the batter with extra sugar and cinnamon. Put in preheated oven and bake for about 45 minutes or until an inserted toothpick comes out clean from the center. **Tip- I usually bake these on a top rack so that the bottoms don’t get too brown.
Pull them out of the oven when done and let them rest in the pans for about 5 minutes before trying to remove them from the pans– you can also just leave them in the pans and cut slices as you want them after cooling. Cool on wire racks or in the pan before serving. **I usually just let them cool till they are just warm, then serve with butter. It’s so good when warm and buttered, and also cold as a treat… there are plenty of chunks of apple in there for every bite! Leftover, cooled bread can be stored wrapped in plastic wrap or in a gallon ziploc bag in the fridge.
