  • Salt and pepper to taste

Instructions:

  1. Gently mix the watermelon, greens, feta, mint, and onions in a large salad bowl.
  2. Drizzle EVOO and Balsamic vinegar over the top and gently turn the ingredients to coat.
  3. season with salt and pepper to taste!

Rotini Caprese Salad

  • 8 oz rotini pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup mini mozzarella balls (bocconcini), halved
  • 1/2 cup fresh basil leaves, torn
  • fresh greens like dandelion or arugula
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine cooked pasta, greens, cherry tomatoes, mozzarella balls, and torn basil leaves.
  2. Drizzle olive oil and balsamic glaze over the salad and gently toss to coat.
  3. Season with salt and pepper according to your preference.
  4. Refrigerate for at least 30 minutes to allow the flavors to mingle.
  5. Serve chilled and savor the harmonious blend of flavors reminiscent of the classic Caprese salad.

Asian Noodle Salad

  • 8 oz rice noodles, cooked and cooled
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumbers
  • 3/4 cup sliced bell peppers
  • 1/2 cup edamame, cooked and shelled
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cilantro
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Optional toppings: roasted peanuts, sesame seeds

Instructions:

  1. In a large bowl, combine cooked rice noodles, shredded carrots, sliced cucumbers, edamame, scallions, and cilantro.
